Bury St Edmunds: Plans for new cafe in ‘vibrant’ town

A Suffolk-based coffee company is planning to open a cafe in Bury St Edmunds which will be one of the firm’s first in the county.

Paddy Bishopp, of Paddy and Scott’s, said he was walking down bustling Abbeygate Street when he noticed the West Cornwall Pasty Company outlet had closed.

Thinking it would be the “perfect spot” for a Paddy and Scott’s cafe, Mr Bishopp jumped at the opportunity.

The firm, which is based in Earl Soham, near Framlingham, has submitted a planning application to St Edmundsbury Borough Council for the unit and hopes the new cafe will open in October.

Mr Bishopp, who is a founder of Paddy and Scott’s alongside his friend Scott Russell, said they were really excited about opening up in Bury, which he described as a “vibrant” place. “What’s really good with Abbeygate Street is there’s already a coffee scene. We really feel there’s a place for Paddy and Scott’s within that,” he said.

The company began when they started roasting coffee in Mr Russell’s garage in Earl Soham seven years ago.

The friends – who are also planning to open a cafe in Framlingham in October – are hoping to have 20 to 30 cafes in East Anglia in the next three years. They pride themselves on their top quality coffee, with Mr Bishopp adding it was all about the overall experience for customers.

“We want people to go to Paddy and Scott’s because they know they will have a good experience, whether the coffee, food or customer service,” he said. The plan is to refurbish the unit and the new cafe would create jobs for six to eight people.

Mark Cordell, chief executive of town centre business improvement group Ourburystedmunds, said: “I think the fact the unit will have been empty for only a couple of months and already has a new business is great.”

He added: “I’m very pleased it’s a Suffolk-based company that will have some knowledge of Bury St Edmunds and what we are about, which will hopefully mean they will quickly fit into the community.”

Paddy and Scott’s currently has a cafe in Poole in Dorset.
