Mark Ryder, 37, was serving his term at Highpoint jail at Stradishall near Haverhill.
The former market trader gave guards the slip during a visit to the Grafton Centre in Cambridge.
He is described as white, 5ft 5inches, with shaved mousey, brown hair and a faded tattoo of a cross on his forehead.
