Police said the victim, who is in his late 20s, was stabbed in the bottom during a confrontation in Main Road, Sidcup, south-east London, as he carried takings from his business to the bank.
Detectives are hunting three men, aged in their mid-20s, in connection with the attack.
It is believed the man was assaulted just moments after he left the Horse and Groom family pub and restaurant in Main Road.
It is not known how much money was taken during the robbery, which happened shortly before 3pm today. Several streets have been cordoned off.
The incident took place just hours after a man appeared in court charged with murdering actor Rob Knox at a Sidcup bar in the early hours of Saturday morning.
A Metropolitan Police spokesman said the victim was in a "serious" condition in hospital.
