A new cafe specialising in cookies, coffee and bubble tea is set to open in a Suffolk seaside town centre.

Cookie Barista is set to occupy the former Felixstowe Mobility Centre premises in Hamilton Road, making it the third shop started by business owner Ben Stamp in the county.

He said he hoped to open the store on Friday, February 9, having first opened a cafe in Carr Street in Ipswich in June, 2021 before opening a second branch in St John's Street in Bury St Edmunds just under a year ago.

Mr Stamp said the size of the unit would enable his business to offer an expanded range of products, including toasties and pastries, while he said the cafe would be one of the first in Felixstowe town centre to offer bubble tea.

The drink originated in Taiwan and consists of tea accompanied by chewy tapioca balls, although other toppings can be used, including grass jelly, aloe vera, red bean and popping boba.

Mr Stamp said: "We started just after lockdown (during the COVID-19 pandemic) operating small businesses and just under a year ago we opened in Bury St Edmunds down St John's Street, a lovely cobbled street.

The business already specialises in US-style large cookies, but Mr Stamp said the bubble tea was a unique offering in that part of Felixstowe.

"Being in the high street in Felixstowe, there is nowhere you can get that from," Mr Stamp added.
